Chicken Pot Pie and ..& Spring in the South H.

Here in this part or world the Spring is coming soon, but we have yet so cold nights and hot in the morning, some days is cloudy and others rain a little, but the weather is not normal now.

But when I saw my garden and little plants grow up is amazing me the little miracle of each season, when we arrived at this home 4 years ago, you dont believe but all here was stones
, herbs, so we haven't trees, flowers or plants.
Well here is my camelias that I love so, and my mint. Always want to have camelias because in the South in my Grand Ma House she had three camelias so beautiful because there the weather is better to this, more rain and moist, here is most dry, but my little camelia is grow up.
An this mint is that I use to my desserts and others things, is so healthy, thanks to my auntie Manuela that said me to plant near water.
Anyway I have here a yummy recipe of
Bon Appétit magazine of September 2008 in an article dedicated

Chicken Pot Pie

(6 servings)

Ingredients

Crust

1 and half cup of all purpose flour

1/2 teaspoon of salt

1/2 cup of chilled unsalted butter cut into cubes

3 tablespoons (or more) of ice water

1 egg yolk whisked to blend with one tablespoon water(for glaze)

Filling

6 tablespoon of butter room temperature divided

5 tablespoon of allpurpose flour

2 tablespoon of olive oil

200 grs. mushrooms sliced

1 cup chopped onion

1 cup cubes celery

1 cup cubes peeled carrots

1 1/2 tablespoon chopped fresh thyme

1 garlic clove minced

1 cup dry white wine

2 1/2 cups of chicken (or more) broth

5 cups coarseley chopped or torn roast chicken, skin and bones removed

1 1/2 cups frozen green peas

1/2 cup whipping cream

1/2 cup chopped fresh italian parsley



Crust

Blend flour and salt in processor. Add butter and blend, using on/off turns, until mixture resembles coarse meal. Add 3 tablespoons ice water, blend until moist clumps form,adding more ice water by teaspoon if the dough is dry. (I made this dough without the processor and was so good)

Gather dough into ball. flatten into rectangle.Wrap in plastic film, chill at least 1 hour in the fridge.

Preheat the oven to 220 º C.Line baking sheet with parchment.Roll out crust on floured surface to 12x8 inch rectangle. Cut into 6 equalrectangles. Transfer to prepared sheet,spacing apart.Pierce crusts with fork, then brush with egg glaze.Bake until light golden, about 15 minutes.Carefully run long sharp knife under crusts. Cool on sheet.

Do ahead: Can be 8 hours ahead.Let stand uncovered at room temperature.



Filling

Mix 4 tablespoon of butter and flour in a small bowl until smooth.

Melt 2 tablespoons butter with oil in large wide pot over medium/high heat. Add mushrooms,onion,celery, and carrots, sauté until vegetables start to soften and brown, about 10 minutes.

Add thyme and garlic, stir 3 minutes. Add wine boil until almost evaporated, about 3 minutes. Add 2 1/2 cups chicken broth, bring to simmer. Add butter flour mixture, 1 tablespoon at a time, whisk until incorporated and mixture boils. Reduce heat,simmer until sauce thickens,often,about 5 minutes. Stir in chicken, peas, cream and parsley. bring to simmer .Season with salt and pepper .

Do ahead: Can be made 8 hours ahead.

Preheat the oven. Transfer filling to baking dish.Carefully place crust stop filling. Bake until heated through,about 20 minutes:let rest 5 minutes.



EN ESPAÑOL

En esta parte del mundo la primavera está comenzando a llegar y yo lo noto más que nada en mi jardín. Porque el clima como todos saben está medio raro, frìo en la noche, calor en la mañana, algunos dìas nublados, otros con viento etc.



Siempre cuando esta brotando todo pienso que es como un pequeño milagro el que todo comienza de nuevo, plantas que a veces no tenían mucho futuro estàn con brotes.

Cuando llegamos a vivir aquì hace 4 años, mirè y me deprimì de inmediato, puras piedras,malezas, tierra por donde se mirara (y basura aunque sea increible) la casa ya se habìa arreglado (vidrios rotos, paredes rayadas etc.) pero el jardìn, nunca se habìa hecho nada, de hecho primero se pasó un arado con un caballo para acomodar la tierra y sacar piedras.

Bueno despues de 4 años e sun placer compartir con ustedes fotos de mis camelias y menta.

Adoro las camelias, mi abuelita en Concepciòn (al sur) tenìa tres maravillosos arboles de camelias (blanco y rosados) allà se dan espectaculares porque el clima es más hùmedo, llueve màs etc. aquì cerca de Santiago el clima es màs seco y no llueve tanto.

Pero mi pequeña camelia se ha defendido y cuando tiene algunos botones lindos le pongo a la Virgen. (Las rosas todavìa no brotan) bueno y la menta la han visto en los postres y otras cosas que hago.

Traje esta menta cuando llegué en un pequeño macetero y mirenla ahora, se aclimatò super bien,mi tìa Manuela me recomendò que la pusiera cerca de una llave de agua y asì ha sido. (Gracias tìa)


Bueno ahora la receta, esta tomada de una revista que me encanta de USA Bon Appétit, y es el Nº de Septiembre 2008 y es un artìculo acerca de que comen los chefs y los que cocinan en los restaurant, esta es una receta de Dahlia Lounge de Seattle y es mi entrada para Bookmarked recipe de Ruth de http://justaddeggs.blogspot.com/ .


Pie de pollo


Ingredientes Masa


1 y 1/2 taza de harina normal


1/2 cucharadita de sal


1/2 taza de mantequilla sin sal en cubos


3 cucharadas de agua frìa


1 yema de huevo disuelta en una cucharada de agua


(para el glacè)


Ingredientes relleno


6 cucharadas de mantequilla atemperatura ambiente


6 cucharadas de harina normal


2 cucharadas de aceite de oliva


200 grs, de champiñones cortados en rodajas


1 taza de cebolla picada


1 taza 1/2 de apio en cubos


1 taza 1/2 zanahorias peladas y cortadas


1 y 1/2 cucharada de tomillo fresco


1 diente de ajo molido


1 taza de vino blanco seco


2 y 1/2 tazas de caldo de pollo


5 tazas de pollo cortado en trozos cocido sin huesos ni piel


1 y 1/2 tazas de arvejas o guisantes congelados


1/2 taza de crema o nata espesa


1/2 taza de perejil fresco picado


Masa: Unir en el procesador (se puede a mano tambièn) la harina y la sal. agregar la mantequilla y unir bien, si usa el procesador usando on/off para aprender y apagar. Hasta tener una textura cremosa.Agregar 3 cucharadas de agua helada, unir hasta que estè una masa hùmeda, si està seca agregar por cucharaditas. Hacer una bola con la masa y luego estirarla en forma de rectàngulo.Envolver en un film plástico, enfriar al menos por una hora en el refrigerador.


Precalentar el horno a 220º, forrar una bandeja de horno con papel mantequilla o similar. Estirar la masa sobre una superficie con harina haciendo un rectàngulo. Cortar en 6 partes iguales. Traspasar a la bandeja con el papel mantequilla dejando espacios entresí. Pinchar los rectàngulos con un tenedor y pintar con una brocha la mezcla de yema y agua.Cocinar hasta que estèn ligeramente dorados,cerca de 15 minutos. Cuidadosamente con un cuchillo soltar las masa. Dejar enfriar.


Nota: se pueden hacer hasta 8 horas de anticipaciòn, dejarlas sin cubrir a temperatura normal.


Relleno; Mezclar 4 cucharadas de mantequilla y harina en un bowl pequeño hasta que estè suave. Derretir dos cucharadas de mantequilla con el aceite en un sartèn u olla grande a fuego medio/alto. Agregar los champiñones cortados,cebolla, apio y zanahorias, sofreir hasta que los vegetales estèn suavemente tostados, cerca de 10 minutos. Agregar el tomillo y el ajo, revolver por tres minutos. Agregar vino,hervir hasta que estè evaporado, cerca de tres minutos, Agregar 2 y 1/2 tazas de caldo de pollo. Agregar la mezcla de mantequilla con harina de 1 cucharada a la vez, batir hasta que estè bien incorporado, y la mezcla hierva.Reducir el calor, calentar hasta que la salsa se espese, revolver de vez en cuando, cerca de 5 minutos. agregar el pollo picado,arvejas o frijoles,la crema y el perejil, calentar y sazonar con sal y pimienta.


Precalentar el horno a 220ºC, transferir el relleno a un molde cuadrado de hornear, colocar cuidadosamente sobre el relleno los pedazos de masa. Cocinar hasta que estè caliente y servir. Dejar reposar 5 minutos.

Little Lemon Meringues Pies

I adapted these cute Lemon Meringue Pies from FoodNetwork.com . Really love all with Lemon, except of course berries, you know how I love them. But I love lemon and oranges because are so tasty and you may make all year!! So here is the recipe


Little lemon Meringue Pies (6 servings)

Ingredients Crust

5 tablespoon unsalted butter,at room temperature

3 tablespoons sugar

Pinch of salt

1 large egg yolk

1 cup of all-purpose flour

1 teaspoon of sour cream or yogurt




Lemon filling


1/2 cup of sugar


1 and half tablespoon cornstarch


4 large egg yolks


3/4 cup of freshly squeezed lemon juice



1 tablespoon finaly grayed lemon zest



3 tablespoon cold unsalted butter, cubed


Meringue

3 egg whites

1/2 cup of sugar

1/4 teaspoon cream of tartar

Pinch of salt


strong>1 standard (6-cup) non stick muffin tin
Crust
Beat the butter in a medium bowl with an electric mixer to medium high until smooth (or with hand) Add the sugar and salt and continue beat until evenly combined. Scrape down the sides of the bowl, then beat and add the flour and the sour cream or yogurt, beating just until the dough is evenly moistened. Turn down onto a lighty floured work surface and knead lightly to bring it together.


Roll the dough between 2 generously floured sheets of waxed or parchment paper into a circle about 1/4 inch thcik with a rolling pin. Refrigerate by 1 hour.

Cut out 6 rounds using an inverted bowl or round cookie cutler. Place rounds in the muffins tins and using a small shot glass or fingers press into the corners and the sides (see photo) Freeze dough in the muffin tin for 30 minutes.


Preheat the oven to medium heat. (180º) Butter the muffins liner and place the crust.Fill with some beans or pie weights. Bake crusts until just brown round the edges, cook about 25 minutes.


Remove from the oven and cool about 1 minute,then carefully remove the muffins line and beans. Return pan to the oven and continue cookin until are cooked and little browned, about 15 minutes more.Cool. Then carefully remove crusts from the muffin and cool completely on a rack.


Lemon filling


Combine the sugar,cornstarch and yolks in a saucepan.Whisk constantly to medium-low heat until the mixture is smooth and sugar dissolves, about 1 minute. Add the lemon juice and zest and continue cook whisking constantly,until the mixture is as thick as a cream and simmer by 3 to 4 minutes.(Take care to stir into the sides of the pot so that all curd thickens evenly)

Add the butter and by a time until smooth. Stir ocassionaly until cooled.Fill each tartlet with 1 1/2 tablespoons of the lemon cream.

Meringue

Beat the whites with a pinch of salt at medium-high speed until they hold sof peaks add the cream of tartar and the sugar, increase speed to high and continue beat to make astiff,cool meringue. Dollop or pipe on top of the filling.

Just before serving, preheat the broiler to high. Set the pies in a baking sheet, and place under the broiler until the meringue is toasted or brown meringue with a blowtorch. Refrigerate until ready to serve.


EN ESPAÑOL

Mini Pies de limòn

Esta receta de mini Pies de Limòn la adaptè de Food Network.com ya que aparte de las berries me encanta el limòn. Me gustan el limòn y la naranja porque se pueden hacer todo el año.

Ingredientes Masa

>
5 cucharadas de mantequilla sin sal temperatura ambiente

3 cucharadas de azùcar

pizca de sal

1 yema de huevo

1 taza de harina normal
1 cucharada de yogurt o sour cream.

Un molde para muffins de 6 espacios.

Relleno de limòn
1/2 taza de azùcar
1 cucharada y 1/2 de maicena
4 yemas de huevo
3/4 taza de jugo de limòn fresco
1 cucharada de ralladura de limòn
3 cucharadas de mantequilla sin sal frìa

Merengue
3 claras de huevo
1/2 taza de azùcar
1/ cucharadita de cremor tàrtaro
1 pizca de sal

Masa:_ Batir la mantequilla en un bowl mediano con batidora elèctrica (si no batir a mano) hasta que estè cremosa. Agregar el azùcar y saly continuar batiendohasta que estè bien mezclado, Agregar la yema de huevo la harina y la crema o yogurt.Batir hasta que la masa estè humeda.Coloque la masa sobre una superficie enharinada y amase ligeramente para unir.
Amasze la masa entre dos hojas de papel mantequilla espolvoreada con harina. Refrigerar por 1 hora.
Cortar redondelas usando un bowl invertido o un cortador de galletas. Ponga las redondelas en los moldes de muffins y presione con los dedos al fondo y a los lados. Congele un poco la masa dentro del molde de muffins, aproximadamente por 30 minutos.
Precaliente el horno a temperatura media.

Enamantequille el molde de muffins y coloque las masita, rellene con judìas o legumbres para que no suban.Cocine en horno hasta que los bordes esten dorados. alrededor de 25 minutos.
Retire del horno y deje enfriar por un minuto, cuidadosamente saque las masas y retire las judìas o legumbres. Lleve a horno nuevamente y cocine hasta que la masa estè ligeramente dorada de 15 a 20 minutos. Deje enfriar para despues rellenar.
Relleno de limòn
Combinar el azùcar, maicena y yemas de huevo en un sartèn de teflòn.Revuelva constantemente a a fuego medio hasta que el azùcar se disuelve y la mezcla se vea suave. Agregar el jugo y ralladura de limòn y unir bien revolviendo constatemente cerca de 3 a 4 minutos.
Agregar la mantequilla en trozos y unir bien. Dejar endriar. Rellenar las tartaletas con 1 cucharada y1/2 de esta crema de limòn

Merengue
Batir las claras bien firmes con una pizca de sal a velocidad media, agregar el azùcar y el cremor tàrtaro hasta que quede un merengue consistente y firme. Poner en una manga para decorar o cubrir las tartaletas.
Se puede dorar con un soplete o en el horno prender el grill, poner los pies en una bandeja de horno hasta que estèn ligeramente tostados. Refrigerar hasta el momento de servir.
