This delicious recipe of creme fraîche roasted salmon I adapted from June Bon Appetit and american Magazine that really I love the recipes. So good.
I love this type of recipes so simple and tasty, that you really enjoy the salmon taste.

I use freeze salmon but is so good if you have fresh salmon

I serve with salads but is nice with mashed potatoes too.

Ingredients (6 servings)

1 kg. aprox. center salmon fillet with skin
black pepper and salt
1 tablespoon of oil
1 cup creme fraîche or sour cream
2 tablespoon of green onions chopped (the green part)
1 lemon juice

METHOD
Preheat oven to 200 ºC Line rimmed baking sheet with foil.
Place salmon, skin side down,on baking sheet, sprinkle with salt and pepper ànd add the tablespoon of oil.
Add the green onions chopped. And the lemon juice.
Spread creme fraîche over salmon.
( Cream fraîche sometimes is not vailable at every supermarket, but with a pint of heavy cream and a splash of buttermilk, you can easily make it at home)or some sour cream is good to.
Roast salmon until opaque in center, about 15 to 20 minutes.
To test for doneness, cut small slit in thickest part of fillet; all but center of fillet should be opaque.
Using spatula transfer to platter and serve.

Llevar a horno.
