Lemon Pie whith raspberries sauce





What is better than Lemon Merengue Pie?? A lemon Pie with raspberries sauce I think!
When I saw this recipe I fall in love literally, Lemon Pie ( and really all desserts with lemon) is my favorite pie and here all we love it. Finally I made it and was really nice.
Fortunately I took photos when the Pie was still hot (so the pieces are a bit disarmed ) but would have been futile to expect the next day, at night the plate was empty...

This recipe is adapted from Recetas Líder , Mayo 2010

 Ingredients

Crust Pie

2 cups of lemon cookies grinded
4 tablespoons of melted butter

Filling

200 grs. frozen raspberries
100 grs. sugar
1 tin of condensed milk
2 lemon (juice and peel grated)
3 yolks eggs

Merengue

3 whites eggs
200 grs. caster sugar
pinch of salt










Method

Crust pie



Grind cookies in a processor and place in a bowl together  with melted butter.Mix well.Like a dough
Place cookie dough in a buttered pie shell (approx. 24 cm)
Refrigerate while preparing filling.

Raspberry filling
In a saucepan  place the  raspberries.and 100 grs.  sugar and 1 / 4 cup water and  mix with a 1 tablespoon of cornstarch. Mix with a woodenspoon.
Cook over low heat until sugar dissolves and has a thick consistency.

Lemon cream filling
In a bowl mix condensed milk with lemon juice and lemon zest, add the yolks and mix well.
Place in the oven the pie dough  with lemon cream for about 6-7 minutes (oven 170 ° c)

Remove.
Beat the egg whites for meringue with a pinch of salt until firm, add sugar until you have a glossy meringue.
First spread the raspberry jam over the lemon cream.
Wait a few minutes and spread the meringue over the Pie.
Bring to medium heat (170 ° c) until lightly browned, about 6-7 minutes.

Remove and let cool before serving.

Tarta de limón con salsa de frambuesa
(Pie de limón con frambuesa)


Qué  es mejor que un Pie de Limón ?? un Pie de limón con salsa de frambuesa. Cuando vi esta receta me encantó  y por supuesto que se me había perdido (tengo muchas) llegué al nivel  que no   sabía si la había leído en inglés o en español, rianse no más, me pasa a menudo, leo mucho en los dos idiomas a veces marco y  guardo una receta pero tengo tantas pendientes...
Bueno la receta fue un exito e incluso le pensaba sacar otra foto al otro día, pero no pude, se lo terminaron en la noche.

Ingredientes

2 tazas de galletas de limón molidas
4 cucharadas de mantequilla derretida

Relleno
200 grs. de frambuesas congeladas
100 grs. de azúcar
1 tarro de leche condensada
2 limones su jugo y la ralladura de los limones
3 yemas

Merengue
3 claras de huevo
200 grs. de azúcar glass (en polvo)
1 pizca de sal

Preparación de la masa

Colocar las galletas molidas en un bol y agregar la mantequilla derretida.
Mezclar bien y forrar un molde para tarta (24 cm) Refrigerar mientras se prepara el relleno.

Relleno de frambuesa
Colocar en una olla 100 grs, de azúcar y las fambruesas, 1/2 taza de agua y 1 cucharada de maicena. Cocinar a fuego lento hasta que el azúcar se disuelva, debe quedar una mezcla espesa.

Relleno de limón

En un bol colocar el tarro de leche condensada, agregar el jugo y ralladura de limón, mezclar bien, agregar las yemas de huevo, mezclar.

Merengue

Batir las claras con una pizaca de sal, batir firme,  poco a poco agregar el azúcar. Hasta obtener un merengue firme y brillante.

Retirar del refrigerador la masa de galletas cubra con la crema de limón y lleve a horno por unos 6 a 7 minutos (170°c)

Retirar y  esparcir sobre la crema de limón la mezcla de frambuesas. esperar un poco y esparcir encima el merengue

Cocinar en el horno  por unos 5 a 6 minutos horno medio/bajo hasta dorar ligeramente.

Dejar reposar. Servir. Se guarda en el refrigerador.
